Fermol Super 16 is a selected yeast strain capable of good performances in specific environmental difficult situations or when grapes with particular characteristics are treated.

This yeast is ideal for obtaining structured red wines with low volatile acidity even in the absence of temperature control; it starts fermentation in a very short time even in the presence of difficult conditions, easily standing sudden changing in temperature.
Fermol Super 16 has a noticeable 17% vol. alcoholigenous power and, even in the presence of high alcoholic degrees, constantly develops quality; it has a very good resistance towards SO2 and does not produce sulfuric acid.
Yeast ideal to obtain structured red wines with low volatile acidity, Fermol Super 16 gives excellent results in the fermentation of sugar-rich musts, such as those derived from dried grapes.

Wines produced with Fermol Super 16 highlight a soft round, full taste and possess a wide aromatic range including varietal aromas and smells improving during the transformation process.
When tasting wines, the sensorial analytical outline includes citrus notes and flower smells, of white flowers.
