Paul Hoover, Owner/Winemaker
Still Waters Vineyards

"Upgrading your winery from 1000 cases per year to 3000 to 5000 can be a daunting task. The choices in equipment, capacity and price vary all over the place.  The great thing about Ryan is, having been a winemaker for years, he knows how to design things from start to finish. When I harvested my first ten tons of the year at 6:30 a.m., Ryan and his staff were there making sure everything was working correctly. I knew I had made a good decision."

HOW FLEXTANK VESSELS WORK: New 60 gallon barrels mature wine by diffusing 20-30mg (15-22cc) of air oxygen per liter of wine per year (mg/l/yr) through their semi porous staves. Each year, approximately 10% of this initial permeability is lost due to progressive clogging with wine solids. Flextank’s taint free, targeted permeability vessels are designed to permeate air-oxygen through the polyethylene in the same natural way, as average 2nd to 3rd season barrels. No change in cellaring practice is required.
Flextank vessels offer a number of benefits compared with traditional oak barrels:
  • No Topping Required - Flextank’s polyethylene is almost impermeable to water and alcohol vapor so these vessels do not require routine topping, thus saving significant labor cost.
  • Superior Volatiles Retention - Oak barrels wick out and evaporate fruity ethyl esters and aromatic compounds from wine that are retained by Flextank vessels. Users over 5 vintages in Australia and 3 in North America report superior matured wine quality to that from top quality French or American oak barrels.
  • Hygienic, Long Lived - There is no porosity or grain to clog so these vessels retain their permeability indefinitely. Tartar does not stick, nor does the material stain. Unlike barrels, these vessels retain their permeability indefinitely. They can be CIP sterilized and are compatible with regular winery cleaning agents and practices including hot water and ozone.
  • Available in space saving formats - Flextank vessels are space efficient compared with oak barrels with space savings of up to three fold compared with racked barrels depending upon the format chosen. The saving in construction cost, building maintenance, energy costs and property taxes can be considerable.
  • Significant cost savings - Apart from the operational savings already discussed Flextank vessels are efficient users of oak adjuncts where oak flavor is required. Users report oak costs below 8c per liter using quality adjunct products. Pay only for the oak required and not for the expensive artisanship of barrel making. Efficient use of oak preserves the forests.
