 Endozym Active is a pectolytic enzyme based on concentrated pectinase, indicated for the treatment of grapes and for the clarification of musts and wines. The selective process enabling to improve the composition of Endozym Active has also enabled to eliminate the secondary metabolic activities that may occur in wines, such as the presence of cinnamyl-esterase, responsible for harmful compounds for wine aroma, such as vinyl-phenols.
 
Thanks to the pectinlyasic and polygalacturonasic activity, this enzymatic preparation enables the hydrolysis of the pectic chain present in the median lamella and in the cells’ primary wall and facilitates the draining of juice from the marc. Endozym Active accelerates pressing, clarification and filtration processes, as it decreases their speed and reduces, because of its peculiar enzymatic activity, the dimension of pectic molecules. The consequence is an increase in the sedimentation speed of the degraded pectic substances and an increase in the sedimentation of other suspended particles, non only because viscosity is reduced, but also thanks to the electric interactions of the polysaccharides on these particles.

At normal doses utilized nowadays in oenology, sulfur dioxide is not an obstacle for the correct enzyme functioning. In any case, it is suggested to wait at least 30 minutes before adding enzyme/sulfur dioxide.
